@Kernow - You really are obsessed with cornwall. I really wouldn't be surprised if you spoke the language :p.

The problem with the celtic countries is that when you have united ireland, scotland, wales and brittany there really isn't much to do, other than taking on england of course, which is a fun challenge but not exactly optimal for a beginner. IMO the perfect starter is apulia->sicily; barca->aragon is good too although iberia can be tricky. Don't really want to go on about these as they are well documented. Somewhere is russia would be good too; novgorod or kiev would be easy enough as a starter, but with a tough challenge to be king of Rus.

Most important thing though for a beginner country/dynasty is that you enjoy playing it. You don't want a game to become a chore once you have completed an easy target. Ideally something with attainable goals but with difficulties along the way.
 
I second Apulia. You have lots of dirty muslims to fight against against, you can strive for dominance in Italy, and later of the whole med. It's a nice compact realm with lots of opportunities.

I learned the ropes of CK as Poland, which I think is good as well. It's reasonably sized, but still managable. You also have great opportunities for early conquest at the expense of Baltic pagans. After that you can fight for supremacy with Germany and Russian princedoms.
 
I say play as Kingdom of France. It is one of the easiest, but even so, not "easy."
