Just like before and in EU4, there should be, Culture, Religion, etc... the usual

However I also think for the CK series there should be an "ethnicity" tab. In CK2 culture was tied to what ethnicity was generated there. If lets say you were French, and took on an Italian culture, then all the ethnicity in your kingdom would eventually be Italian, this was weird cause in the game code there were ethnicity but they were not separate from cultures.

and perhaps mapmodes for whatever unique thing each nation can choose/have

Not sure what else, there should be but that seemed to be the only thing missing

I always wanted a fortification level map mode, so I could quickly see where my defenses needed upgrading without checking every province.
 
Since we know that different rulers can have different degrees of dread, I think it would be fun having a mapmode highlighting the most dreadful rulers of them all
