My first custom empire will be-
Species: Human
Government Type: Technocracy
Ethos (Roman numeral indicates the # of points invested): Militarist I, Collectivist II

It will be a grand civilization built around rationalism and subjugating civilizing the rest of the Galaxy.

Ideally they will be highly diplomatic, and will fight proxy wars against their enemies by selling arms and ships to those fighting who they want dead.

United Soviet Socialist Republics of Earth. Collectivist, militarist and materialist.

It's too bad Stellaris doesn't allow two civilizations to share the same planet, that would make for one epic alt. history Cold War scenario...

A race ruled by a dictatorial regime (either military junta or by a single dictator, I have not decided yet) hell bent on enslaving all sentient species out there in order to establish its superiority on the galaxy. Very little use of diplomacy and cold war type relations with all neighbors. Extensive use of slavery and eugenics, completely against sentient AI's.
 
Humans guided/aided by an AI.
Humans enjoy life, discover the Universe, do "Art" etc.
AI does the economic, research, diplomacy, any actual work.

Priority of the AI

#1 Safety of the Humans
#2 Safety of the AI
#3 Mantaining luxus for humans
#4 Learning about the universe

The AI will use force to achieve all 4 points.

Technological strenghs at the start: AI / Robotics / Drones & Recycling / Ressource efficency
 
For my first playthrough, I feel inclined to have an Oligarchic Technocracy of Arthropoids, probably going Xenophile I, Materialist I and, perhaps, Individualist I. I don't want to follow that cliche of "insects = eusocial hivemind", and I know there are quite a few species of social spiders around, so having a individualistic society of arthropod-like beings isn't inherently more oxymoronic than having a individualistic society of anything.

After that I'll give a chance to a plutocratic Terran society, probably going Materialist II, Xenophile I.
