After the recent patch for this mod, a certain race of "Caucasian Pedestrians" have been added. This is what is says on the tin, what do you think? what is wrong? what can be added?

IMO, I think that there isn't enough of an opportunity to fight back, I had the Chosen by R'Hllor trait and I couldn't even offer to defend the Wall, like with the wilding event, the moment the WHite Walkers declare war on the wall, every independent lord (and maybe duke lever lords too) in the 7 kingdoms and in the Free Cities (R'hllor would want to defend against the great other) should get an event to defend the wall, then the North, and so on. If the Entire 7 kingdoms fall? Only The Lord of Light can save them now...
 
There are some issues with the Others that have been resolved for the next version, the main ones are: The capital of d_winter changing all the time, the lands of the wall auto being returned to the NW then being returned to the others and that repeating forever, white walkers being able to get events and finally the white walkers leaving their non winter culture group courtiers alive.
We have implemented numerous new ideas into the white walkers for the next version so they work and most things you want to be added are.

There are two prophecies associated with with Azhor Assh'ai and the Prince that was Promised, who will fight to great other (Assumed to be the White Walkers [at the same level that the big bang happened]), the first is:
There will come a day after a long summer when the stars bleed and the cold breath of darkness falls heavy on the world. In this dread hour a warrior shall draw from the fire a burning sword. And that sword shall be Lightbringer, the Red Sword of Heroes, and he who clasps it shall be Azor Ahai come again, and the darkness shall flee before him.
~Azhor Assh'ai Prophecy
The "the cold breath of darkness" is meant to mean the White Walkers, therefore Azhor Assh'ai reborn will fight the white walkers as the orginal Azhor Assh'ai did.
The Second is that there is a prince that was promised, and that:
"His is the song of Ice and Fire"
While these could be the same person, it thought that they are not, and there is a third prophecy of the Great Stallion who Mounts the world, although now we are going into fan theories.

The Nights Watch can and do call the realm to help them defend against or attack the Others. In the next version there is also more opportunity for other Westerosi to fight back as their lands get threatened.

R'hllor, the Red Faith and it's Great Other concept are an Essos thing and have nothing at all to do with Westeros or White Walkers.

Not actually true. The word "other" is being used in a different context in both cases. It's a red herring.

The Great Other = There are 2 gods R'hllor and the other one
The Others = There are humans and then there are the other races

The Azor Ahai prophecy comes from Asshai which is about as far away from the Wall and Westeros as possible and it doesn't once mention white walkers or the Long Night. The official Red Faith interpretation as preached by Master Benerro is that Azor Ahai (Dany) will free the slaves and defeat the last Valyrians behind the Black Wall.
Even Melisandre made no connection between AA and the North until Davos read Mormont's letter.
 
It seems like too big a thing to be merely a red herring though. In a non-fantasy universe I might agree but in fantasy things have a way of crossing over. At the very least, I'd say the Azor Ahai should get an event about the White Walkers, leaving it to him to decide whether it is his destiny to fight them or whether they are irrelevant. So just like Stannis you could decide to mix myths.

Also unless I missed something, the Others refer to one non-human race in particular, two if you count the wights. I'm pretty sure it was never applied to giants, Children of the Forest, etc.
 
Well, this is a tricky area, we will learn more with Winds of WInter, or if the Show shows more scenes North-of-the-Wall (Such as the one where we learn where new White Walkers/Others come from). Personally, I think Azhor Assh'ai Reborn would fight the White Walkers, as his forebear did.

Also I have heard an interesting Theory that is very well back up saying that the White Walkers are more than meets the eye:

Interesting, Eh? Maybe the Starks ARE on the White's side...

SO uh, yeeah, got into a war with the White Walkers. Beat them, but... they're still there? Are they supposed to disappear after being beaten, or do they just stay on the map as a permanently new faction with ungodly amounts of warriors?

That's a bug in the current version. It's been fixed for the next update.
