For anyone else having this problem I have a workaround. If you remove the file 'heightmap.heightmap' from 'Crusader Kings III/game/map_data'. It will make the map more 2D. No more weird bars on the map. Might help you until there's a fix

Turn on 'advanced map shaders' or the map will be all green and not very useful. Mountains will look a bit like lakes but it's much better than the bars and distortion everywhere.

It also changes the checksum so no achievements

Deleting that file did fix the weird bars and blockiness on the map. But where do you find the option for "advanced map shaders"? I'm not seeing it in the graphics options in-game.

Well done, but do you have a screenshot of the problem this solves please? Is it like this one?

Can everyone having this please post their dxdiag.txt and other files I mention in that other thread please. I want to see if there is a common factor such as GPU, driver, Windows version etc. Thanks!

I'll lock this one now to keep it all in one place.
