Sounds perfectly legit to me, Easterners = Europeans, no?

Yeah, to get to Europe from the Americas, you travel east. Makes sense that if the Aztecs had somehow managed to sail to Europe, they'd consider Europeans "Easterners".

But the picture @Keizer Harm provided is an event from a Tibetan character, so in her point of view, the Aztecs are the ones called "Easterners across the sea."

Which would require Tibet to know that the Pacific ocean exists, and what's on the other side of it - about 600 years (500 if you believe that China story) before anyone knew that.

I'm pretty sure it's from the Aztecs PoV, the "More religions than a parrot has feathers" seems to be more fitting to Europe, North Africa and Asia than Central America

I've got a game where East Francia ended up inherited by West Francia, and Lotharingia ended up going to Burgundy and Ostlandet. Ostlandet then collapsed somehow and it's been taken up by Lotharingia again, so now Lotharingia is the Ruhr Valley and a huge chunk of Norway.

The Byzantine Empire expanding seems simple, in comparison.

Yeah, I couldn't remember the exact positions of the lands. I should have saved it when all of Lotharingia was Ostlandet, instead.

Well I mean really all it means is that they know the world is round, which people have known since before the Roman Empire. Tibetans doubtless already knew about the sea east of China, and that there is nothing so far known on the other side of it. Not hard to make the connection that the Aztecs wayyy west of Europe must be from some land east of China and Japan (unless the mythical tales of far western lands/Europe aren't dismissed out of hand).

The ERE got inherited by pagan Hungarians. A Crusade for Greece was then called, which I won, gave the land to my relatives and set them free. But the ERE title was still held by the Magyar Khagan. Later the Hungarians became Catholic, and the realm split, and now the ERE is a Hungarian Catholic Horde.

This is why I always "Ask to Leave Court" any Jewish stewards that appear at my court, immediately. Jews are "True Believers" but everybody else has a weak, wishy-washy belief in their faith I guess? Bullshit. After this screenshot the HRE made a holy war for Capua and I (Latin Empire) made a holy war for Sicily. Sadly his son is Catholic, but hopefully he lives another 20 or 30 years so I can get a good two or three holy wars out of him.
