The Steam screenshot does indeed show an older model. But fear not, Ayutthaya will have a new set of units models in Leviathan, and hopefully we can share them with you soon

Semi-relmated question: any chance of getting that level 5 sprite available?

I just noticed it wasn't that clear in the patchnotes, but with 1.31.1 the artificial cap on land unit levels should have been raised from 4 to 6.

So does this mean an enterprising modder can fix the weird giant time gaps between model designs like Napoleonic designs being used in 1740 etc so long as they have the models to fill it?

That is the idea, yes.
