I'm sorry, you guys have probably been over this a million times now, but I'm new to the conversation... so if I uninstall SWMH, for now, then I will get the India portion of the map? If so, how would I go about doing that? Meaning, do I go in and just rip out the file, or do I have to rework some things? Thank you.

Just don't select SWMH when you install. That's all you need to do - remember, all HIP mods can be run independently of each other and in any combination (except SWMH+VIET Immersion for now, although that's not an issue since VIET Immersion isn't ready for RoI yet and thus isn't available yet).

If there's any mod that's updated for 2.1.1, breaking 2.0.4 compatibility, please tell me.

I think I understand, that is an option on the program screen, right... when I have to type "yes" "yes" "yes" a bunch of times... I just type "no" on that option?

Correct.
Hitting enter without typing anything also counts as "yes" BTW; you don't have to write anything then.

Paradox skipped right past 2.1.0 for whatever reason.
This is very weird:

The change log calls it 2.1, and dates it 3/11. It didn't come out until 3/25, 2 weeks later. Most CK2 patches have hit Steam the same day as the change log dates them, with a few within just a few days.

The text that comes up on the launcher calls it 2.1.1 and dates it 3/25. The game itself also says 2.1.1 next to the checksum.

Meanwhile, the save files are marked 2.1.1.0!

This makes me think they really had a 2.1.0 internally, meant to come out on or about 3/11, but delayed to fix something. And they didn't fully update their versioning system.

Thank you, much appreciated.

Does HIP make any changes to religious wars? As a Catholic ruler I want to start a war with my Muslim neighbor. According to the CK Wiki for Casus Belli I should be able to do this but the game tells me I lack a valid CB. What am I missing?

PB makes numerous changes to holy war.
Check out the "is war possible?" decisions.

So if I'm reading it correctly to declare a war against a religious enemy I have to be Wroth, Ambitious, Brave, Lunatic, Possessed, or Zealous? I can't just be a good Catholic and fight them because they are Muslim?

No. The world never quite worked like that. Without political will there wouldn't be any large-scale conquests.

Ok. Guess I'll just have to put on my sneaky uniform to deal with these pesky neighbors.
I recommend the fitting, black leather gloves. Leave no trace.
