If you are having trouble using just one invading fleet. You might want to considering use more than one invading fleet to initiate more than one combat round, they have to arrive at the solar system at the same time preferably from a single solar system naval base, against a single defender fleet to take out more target of opportunities.
There are some weapon that have very long range and can attack planet without coming close to defense platform or defender fleet. This weapon is only found on Levithian as heavy IOBM. You might want to get missile speed + anitmatter warhead to help with damage. I am sure the AI will try to shoot down the heavy IOBM. You can change the IOBM variation to deal with different threats with some other tech. One version will shoot a HCL at the target. Another will break up into multiple missile before impact. One version will create a shotgun of X-ray before impact etc....
It depend on what your enemy is using and what you can get. Comparative Analysis in politic tree behind diplomacy space station will help you know what your enemy is using against you. It will only show you what you have seen in battle after the tech is researched so keep that in mind. In general if the enemy is fielding stronger armor tech then use energy weapon. If you see improve reflective coating then use more ballstic. If they have both then use weapon that can break through one of their tech. Some weapon will hurt armor of a Levithian way more than a Dreadnaught. Most of this information as armor piercing vs blue bar is sadly not exposed to user. So I recommend taking a look over the link below. There are other factor such as armor tech giving energy/ballistic weapon higher chance to bounce off and not do damage. Some weapon have higher chance to do critical damage while some have wider armor damage profile. Take the time to learn the character of each weapon tree and it will help make sense of what to use and what to not use.

Armor Piercing Level: When this value is 1 then it will hit for full damage armor structure on a cruiser without Adamantine Alloys tech (It add an extra blue bar) If it is 3 then it will hit a Leviathan for full damage on armor/structure. There is only one case when you will see 5 blue bar. It is Liir Leviathan because they have an unique racial tech that they can get for extra blue bar along with Adamantine Alloys. Thankfully this unique blue bar tech doesn't show up on their battlerider/battlecruiser/battleship.

I didn't mention that one because it also does infrastructure damage equally with population damage so it would not be ideal to use for taking over planets. I have not personally used it and can only go by weapon stat on the SotS 2 wikipedia.

The other is the ultimate bioweapon. It doesn't have a cure and isn't stopped by the universal antigen or zuul immunity either, at least according to the documentation. It's pretty low probability to get it, no matter what race you're playing as.
