More or less; as far as I can tell the French actually invaded Burgundy before Brittany got the PU, but certainly before they got the inheritance.
 
That's a new one, England converted to Orthodox somehow
One of the Byzantine missions mends the Great Schism, aptly named "Mend the Schism." Alternatively, if you don't have King of Kings, than it's the mission "Rome Reclaimed!" In theory, most Catholic nations should be Orthodox now (they won't convert if they are rivaled, hostile, or outraged with Byz, though.)

Otherwise, I don't really know how they managed to switch (unless there's an event similar to the one that can change your nation's culture to the ruler's culture.)

So the Dutch were in personal union with Russia. The Japanese helped them to liberate themselves, and in the peace treaty the Dutch got the province of Nizhny Novgorod, which is of crucial interest to them for uh...

Sligo got annoyed at all those brits rummaging around in ireland, so it got an island of it's own.

Then it got bored, so a Colony was created. Now that Colony is sligo's only enemy and rival.

The run continues, the attack on the Shun Empire, which holds the Heavenly Mandate, goes very well but reveals some unexpected internal troubles like the rebellion of the Ghilman based in Siberia.

Yeah, with the Mughal Diwan culture shifting is completely unnecessary. However, for any other nation, that would be an extremely cheap culture shift. (Normally, you have to un-state enough other-culture provinces so that new-culture has >50% development. And then re-state it. That can easily be thousands of admin points for an empire of your size.)
