10 is a lot! For me it would be:
1. Ottomans, now and always.

2. Egypt, if it's possible to get rid of Mamluk government form as soon as possible. Peaceful and focused on development.

3. Sarbadars, amazing option, an Iranian urban republic surrounded by nomadic hordes. Crush Mongols as them.

4. Kartids, descendants of Ghurids, form Mughal Empire asap, persianise and iranise as much population in india as possible.

5. Granada or Morocco, restore Al-Andalus asap.

6. Golden Horde, peaceful and focused on modernization and stability.

7. Timur or other central asian Muslim state - turn east, attempt to invade china.

Replay each of these probably.

I find it slightly amusing how when I see a list like this, my brain goes "oh classic (insert flag country) only playing tags from their region!" then I realize looking at my list I pretty much did the exact same thing lmao. So... Yeah! I hope you enjoy all of those!

Funny thing here is I'm not from the region actually, but am Orientalist by education and heart, since 12 years playing only as islamic countries :D not sure which region is yours, hope you enjoy that one too!

Based on the information we have and how unbalanced some countries are and how much money they make, my list has been reasessed:

1. Castille still first. Super easy OP to learn the game without a drop of sweat. Learn colonization, economy, war, diplomacy, blobbing pace, cultures, religion etc.
2. Venice. Perfect nation to dip into the trade system and micromanage it to become an arbitrage nation. Getting goods from the middle east into my market and then resell them into the rest of Europe.
3. Byzantium. It actually looks challenging and fun.
4. Holland. To form the netherlands. Trading with more of an Asian focus. Force to have a strong army and diplomacy to survive and also play the trading and colonization game but in Asia. I get too see how expansion in Asia works and if it is realistic and does not require blobbing and conquer all of India by 1700, but actually I can just set up buildings and buy small outposts to trade peacefully until I make so much money all of a sudden I can take the land for myself.
5. Austria. Austria seems challenging between OP Bohemia and Austria. It will be a challenge to overpower these two nations and PU them. Also unify the Empire, remove protestantism from it so I can keep a hold on it and keep it united and centralize it.
6. Hansa. Pure trading nation, playing arbitrage of all the trade in the north of Europe and between southern and northern europe. It should be a lot of fun.
7. Brandenburg. On release hopefully it will be a lot more challenge to expand in the HRE. Play the diplomatic PU game, expand slowly, building up industry more than trade. Have a super strong big military.
9. Musocvy. Freeing itself from the Tatar Yoke and unify all the small tags around it sounds a lot of fun. Then you have to keep expanding to form modern day Russia. Sounds challenging and fun.
10. Depends on how it releases and how challenging it is, a Japan run could be fun.

Might not be my first playthrough since forming Prussia -> Germany is likely not going to be all that easy without a grasp of all game mechanics,
Actually, forming Prussia -> Germany will be super easy, barely an inconvenience. You just have to get what they had IRL, supreme luck.

Ottomans, Byzantium, Poland, France, Portugal, Castile, horde (too early to tell which), Brandenburg, Sweden, Yuan

1. Cape Colony (I'm a 'Cape Coloured') - hopefully it's playable as a in a 17th century starting date
2. Low lands minor (form the Netherlands and colonise the Cape xD)
3. Ottomans
4. Aztecs
5. Englad
6. Oda
7. Muscovy
8. Jurchen
9. Mughals / indian minor
10. Ethiopia
